  • Cutting Board and Chef’s Knife: For dicing tomatoes, cucumber, and chopping mint and scallions.
  • Mixing Bowl (Large): To combine the salad ingredients.
  • Jar or Small Bowl with Lid: Ideal for whisking and shaking the dressing ingredients together.
  • Whisk or Fork: For blending the dressing ingredients smoothly.
  • Refrigerator-Safe Container (Optional): To chill the salad before serving.

Ingredients
  

For the Dressing

  • 4 tbsps olive oil
  • juice of 1 lime
  • 1 garlic clove minced
  • salt and pepper

For the Salad

  • 3 tomatoes seeded and diced
  • 1 cucumber peeled, seeded and diced
  • 2 scallions chopped
  • – ½ cup mint leaf chopped
  • 1 jalapeño chile seeded and chopped (optional)

Instructions
 

  • In a jar, whisk together the dressing ingredients.
  • In a large bowl, combine all the salad ingredients, toss.
  • Add the dressing and toss.
  • Refrigerate for at least 30 minutes before serving.

Notes

Cooking Tips:

  • Seed the tomatoes and cucumber to avoid excess liquid in the salad.
  • Let the salad rest in the refrigerator for at least 30 minutes to allow the flavors to meld together.

Flavor Enhancements:

  • Add a sprinkle of sumac for a tangy, earthy flavor.
  • For extra crunch, toss in diced radishes or bell peppers.

Storage:
