Equipment

  • Large Bowl To prepare and hold the saffron brine.
  • Microwave-Safe Glass/Bowl: For steeping the saffron in hot water.
  • Smoker or Oven: To cook the shrimp at low heat, infusing them with smoky flavor.
  • Baking Sheet or Smoker Rack: To arrange the shrimp for even cooking.
  • Tongs or Spatula: For handling the shrimp during and after cooking.
  • Serving Dish: To beautifully present the shrimp, warm or chilled.

Ingredients
  

  • 2 lbs shrimp peeled and deveined
  • ½ gal water about 8 cups, almost 2 liters (1.89)
  • ¼ cup pickling salt
  • ¼ cup sugar
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • ½ tbsp coriander
  • ½ tbsp celery seeds
  • ½ tbsp safrron
  • 1 tbsp kashmiri chili powder
  • 1 tbsp garam masala
  • 5 bay leaves broken

Instructions
 

  • Place the saffron in 2 cups of water in a microwave-safe glass or bowl. Heat on high for 90 seconds.
  • Let the saffron steep in the water for about 20 minutes.
  • Dissolve the remainder of the seasonings in the remaining 6 cups of water.
  • Add the saffron ‘tea’.
  • Add the shrimp and let brine for at least 3 hours at room temperature.
  • Heat your oven or smoker to 250°F.
  • Place the shrimp in the oven for 30 minutes or until the flesh is opaque and cooked through.
  • Serve chilled or warm.

  • Allow the saffron to steep fully in hot water to release its vibrant color and distinct aroma.
  • For best results, use fresh or high-quality shrimp and ensure they are peeled and deveined before brining.
