Ingredients
- 2 lbs shrimp peeled and deveined
- ½ gal water about 8 cups, almost 2 liters (1.89)
- ¼ cup pickling salt
- ¼ cup sugar
- 1 tbsp garlic powder
- 1 tbsp onion powder
- ½ tbsp coriander
- ½ tbsp celery seeds
- ½ tbsp safrron
- 1 tbsp kashmiri chili powder
- 1 tbsp garam masala
- 5 bay leaves broken
Instructions
- Place the saffron in 2 cups of water in a microwave-safe glass or bowl. Heat on high for 90 seconds.
- Let the saffron steep in the water for about 20 minutes.
- Dissolve the remainder of the seasonings in the remaining 6 cups of water.
- Add the saffron ‘tea’.
- Add the shrimp and let brine for at least 3 hours at room temperature.
- Heat your oven or smoker to 250°F.
- Place the shrimp in the oven for 30 minutes or until the flesh is opaque and cooked through.
- Serve chilled or warm.
