Ingredients
  

  • 2 mangoes firm and ripe, diced
  • 1 cucumber seeded and peeled, diced
  • ½ cup cilantro fresh and minced
  • 4 jalapeños seeded and chopped
  • 1 bunch scallions chopped
  • 1 tomato seeded and diced
  • 2 tbsps balsamic vinegar
  • 2 tsps granulated sugar

Instructions
 

  • Combine all the ingredients in a bowl.
  • Leave at room temperature for a few hours to bloom.
  • Will keep in the refrigerator for a few days.
