Korean Egg Roll (Gyeran Mari) Recipe

Korean Egg Roll (Gyeran Mari)

Korean Egg Roll (Gyeran Mari)

Korean Egg Roll, or Gyeran Mari, is a beautifully layered, savory egg dish popular in Korean cuisine. Known for its colorful, rolled presentation and soft, fluffy texture, this egg roll is quick to prepare and perfect as a snack, appetizer, or side dish. Gyeran Mari brings together the delicate taste of eggs with the subtle crunch of finely chopped vegetables, typically green onions and a touch of sweet onion. Each roll is simple yet packed with flavor, with just a hint of sea salt and black pepper seasoning to enhance the ingredients’ natural taste.
The real magic of Gyeran Mari is in the rolling process, which creates layers upon layers of tender egg. When sliced, it reveals a visually appealing spiral of egg and vegetables that’s easy to eat and share. The egg is carefully cooked just enough to hold its shape but remains moist and fluffy on the inside, giving each bite a satisfying texture.
This dish is often a staple in Korean home meals and lunchboxes (bento), adding both color and flavor to the plate. Though it’s simple, the result is incredibly comforting, embodying the essence of Korean home-cooked goodness. Not only does Gyeran Mari taste delicious, but it’s also a versatile dish—easy to customize by adding ingredients like crab sticks (Krab), carrots, bell peppers, or even a bit of cheese for extra richness.

Equipment

  • Non-stick Frying Pan (6-8 inches): Essential for achieving an even cook on the eggs, a small non-stick pan helps you maintain control while rolling.
  • spatula :Needed for spreading oil and carefully rolling the eggs without tearing.
  • Sharp Knife :A precise knife will allow for clean slices when cutting the roll into bite-sized pieces.

Ingredients

  • 2 eggs
  • onion
  • 3 stalks green onions
  • a few sprinkles of sea salt
  • a few sprinkles of ground black pepper
  • some cooking oil

Instructions

  • Combine the beaten eggs with the prepared vegetables.
  • Add some cooking oil into a preheated pan; spread the oil with a spatula.
  • Pour the eggs-and-veggies mixture.
  • When the bottom of the omelet is about 70% cooked, start rolling it over. Once cooked through, slice it into bite-size pieces.
  • Serve.

Notes

  • Ingredient Variations:
Adding ingredients like finely diced carrots, bell peppers, or cheese will add depth to the flavor and color, making the roll even more appealing.
  • Cooking Tips:
Keep the heat low to prevent burning the bottom of the egg roll. The goal is a soft, moist egg that holds together for a neat roll.
  • Serving Suggestions:
Serve warm, either on its own or with a light dipping sauce like soy sauce or gochujang mayo. It’s a perfect side dish for Korean meals, and it pairs excellently with rice, kimchi, or other banchan (side dishes).

Make-Ahead Tips:

Gyeran Mari can be made up to 24 hours in advance and stored in an airtight container in the fridge. While it’s best fresh, a quick reheat in the microwave for 15-20 seconds can bring back its warmth and softness. For a fun twist, try adding leftover vegetables or meats—Gyeran Mari is wonderfully adaptable to a variety of ingredients, making it a versatile addition to any meal.
