Equipment
- Large Container or Ziploc Bag: Used to hold the chicken and marinade for soaking overnight.
- Blender or Food Processor: For puréeing the garlic and combining it with the marinade.
- Meat Injector: To inject the marinade into the chicken, ensuring it is fully infused with flavor.
- Smoker or Grill: For smoking the chicken at the ideal temperature to achieve a juicy and flavorful finish.
Ingredients
- 7 cups water
- 1 cup Frank’s hot sauce
- ¾ cup sugar
- 1 cup salt pickling & canning
- 36 cloves garlic peeled & minced
Instructions
- Mix hot sauce, water, salt, and sugar together until fully dissolved.
- Inject the mixture into chicken breasts, thighs and legs.
- Take 1½ cup of the mixture and the garlic, and put into a blender and purée.
- Combine the purée and the marinade in a container large enough to hold the chicken.
- Add the chicken and submerge, making sure that the cavity of the chicken fills with the marinade and some of the garlic purée.
- Place in the refrigerator overnight.
- Smoke at 257 degrees until the internal temperature at thigh joint reads 170 degrees.
