  • Medium Saucepan: For cooking the caramel sauce.
  • Rimmed Baking Sheet: To bake and dry the coated popcorn evenly.
  • Parchment Paper and Nonstick Spray: To prevent sticking and ensure easy cleanup.

Ingredients
  

  • 8 cups popped plain popcorn from ½ cup kernels
  • ¾ cup sugar
  • ¼ cup hot sauce Frank’s Red Hot Original Sauce
  • 3 tbsps unsalted butter cut into pieces
  • 1 tsp kosher salt
  • ½ tsp baking soda
  • ¼ tsp cayenne pepper
  • nonstick vegetable oil spray

Instructions
 

  • Preheat the oven to 300°F.
  • Line a rimmed baking sheet with parchment paper. Lightly coat the parchment and a large bowl with nonstick spray. Add popcorn to the bowl. Set the baking sheet aside.
  • Bring the sugar and ¼ cup water to a boil in a medium saucepan over medium-high heat, stirring to dissolve the sugar. Boil, swirling the pan occasionally, until the caramel is in deep amber color, about 10 to 12 minutes.
  • Remove from the heat. Stir in the hot sauce and butter (this mixture will bubble vigorously). Return to a boil and cook for another 3 minutes. Remove from the heat; stir in salt, baking soda, and cayenne. Working quickly, (and carefully as the caramel will be very hot), pour the caramel mixture over the popcorn and toss to coat.
  • Spread out the popcorn on the prepared baking sheet and bake, tossing once, until dry, about 15 to 20 minutes. Let cool.

Notes

Do Ahead: Popcorn can be made 4 hours ahead. Store in an airtight container at room temperature to keep our moisture.

  • Use freshly popped popcorn for the best texture. Avoid using butter-flavored microwave popcorn as it may alter the taste.
  • Work quickly when tossing the caramel with the popcorn to ensure an even coating before it hardens.
  • If you prefer less heat, reduce or omit the cayenne pepper.
