Ingredients
- 8 cups popped plain popcorn from ½ cup kernels
- ¾ cup sugar
- ¼ cup hot sauce Frank’s Red Hot Original Sauce
- 3 tbsps unsalted butter cut into pieces
- 1 tsp kosher salt
- ½ tsp baking soda
- ¼ tsp cayenne pepper
- nonstick vegetable oil spray
Instructions
- Preheat the oven to 300°F.
- Line a rimmed baking sheet with parchment paper. Lightly coat the parchment and a large bowl with nonstick spray. Add popcorn to the bowl. Set the baking sheet aside.
- Bring the sugar and ¼ cup water to a boil in a medium saucepan over medium-high heat, stirring to dissolve the sugar. Boil, swirling the pan occasionally, until the caramel is in deep amber color, about 10 to 12 minutes.
- Remove from the heat. Stir in the hot sauce and butter (this mixture will bubble vigorously). Return to a boil and cook for another 3 minutes. Remove from the heat; stir in salt, baking soda, and cayenne. Working quickly, (and carefully as the caramel will be very hot), pour the caramel mixture over the popcorn and toss to coat.
- Spread out the popcorn on the prepared baking sheet and bake, tossing once, until dry, about 15 to 20 minutes. Let cool.

Do Ahead: Popcorn can be made 4 hours ahead. Store in an airtight container at room temperature to keep our moisture.
