Ingredients
- 4 oz black, red or golden caviar
- fresh lemon juice
- 1 thin slice of lemon
- 1 pkg unflavored gelatin
- ¼ cup cold water
Egg Layer
- 4 hard-boiled eggs chopped
- ½ cup mayonnaise
- ¼ cup chopped parsley
- 1 large green onion chopped
- pinch of salt
- pinch of white pepper
- dash of hot pepper sauce
Avocado Layer
- 1 medium avocado diced, 9oz
- 1 medium avocado puréed, 9oz
- 1 large shallot chopped
- 2 tbsps fresh lemon juice
- 2 tbsps mayonnaise
- ½ tsp salt
- dash of hot pepper sauce
- freshly ground black pepper
Sour Cream & Onion Layer
- 1 cup sour cream
- ¼ cup chopped onion
Instructions
- Pam a 7-inch springform pan. (Or line the pan with Saran.)
- Soften the gelatin in cold water in a measuring cup. Liquify the gelatin by setting the cup in the pan of hot water or in the microwave for about 20 seconds on low.
Egg Layer
- Combine all the ingredients with 1 tablespoon of gelatin.
- Taste and adjust the seasoning.
- Neatly spread the egg mixture into a prepared pan.
- Smooth the top.
Avocado Layer
- Combine all the ingredients with 1 tbsp gelatin.
- Spread evenly over the egg layer.
Sour Cream Layer
- Mix with the rest of the gelatin.
- Spread over the avocado layer.
- Cover the pan tightly with a plastic wrap and refrigerate overnight.
To serve:
- Just before serving, place the caviar in a fine sieve and rinse gently under cold water. Sprinkle with lemon juice. Drain.
- Spread evenly over sour cream. Garnish with a thin slice of lemon.

- Greek yogurt can replace sour cream for a lighter touch.
